Low-Carb Coconut Flour Chocolate Chip Blondies

My Low-Carb Coconut Flour Chocolate Chip Blondie recipe is easy to make and offers you a healthier alternative to dessert. Coconut flour is a gluten-free, grain-free, low-carb and nutritious ingredient to use for baking. Coconut flour contains fiber and MCT's (medium chain triglycerides), making it beneficial to both gut and brain health. The higher fiber content supports a stable blood glucose level throughout the day and you’ll feel more satiated after enjoying just one due its higher fat content.

Ingredients

  • 1 c. coconut flour

  • 1 c. granular monk fruit, stevia or erythritol

  • 1/2 c. coconut oil, ghee or grass-fed butter, melted and cooled

  • 2 t. pure vanilla extract

  • 4 eggs

  • 1 t. baking soda

  • 1/2 t. salt

  • 3/4 c. dark chocolate baking chips, Lily’s stevia based chips, cacao nibs or 100% cacao shaved chocolate bar

  • 1/2 c. chopped walnuts(optional)

Directions

  • Preheat the oven to 350.  

  • Line an 8x8 brownie pan with parchment paper.

  • Place all dry ingredients in a bowl and mix well. 

  • Set aside.

  • Place all wet ingredients in a bowl, lightly whisk and set aside.

  • Add the dry ingredients into the wet mixture and blend well.

  • Add in the chips and nuts.

  • Place dough in the brownie pan and lightly press down to flatten.

  • Bake for 30 minutes or when a toothpick comes out clean. 

  • Let cool completely.
