Tigernut Chocolate Chip Cookies

Your new favorite chocolate chip cookie is now filled with healthy, high-fiber, low-carb tiger nut flour. Feel good baking these for your family knowing they are getting a sugar-free, nutritious treat for those midday snacks. Ghee gives these cookies a dairy-free, buttery dose of healthy fats for gut and brain health. Go ahead, fill-up the cookie jar.

Makes 10-12 cookies

Ingredients

  • 2 c. tigernut flour

  • 3 T. ghee, melted

  • 1/2 t. Baking soda

  • 3 T. monk fruit or stevia, granular

  • 1/4 c. Dark Chocolate chips or Lily’s stevia based chips

  • 1 organic egg

  • 2 t. Pure vanilla extract

  • 1/4 t. Sea salt

Directions

  • Preheat oven to 350.  Line a baking sheet with parchment paper.

  • Using a stand-up mixer, or hand-held mixer, combine all ingredients except the chocolate chips. Fold in the chips by hand. Drop be heaping spoonfuls onto baking sheet, forming balls. Gently press down the balls to flatten a little.

  • Bake for 10 minutes. Let cool.
