Cauliflower Alfredo Sauce

This deliciously healthy, dairy-free alfredo sauce has many uses. Enjoy it as a warming soup, a sauce on your cooked vegetables or as a béchamel sauce over your protein, as well as over a bed of nutritious shirataki noodles, kelp noodles or spiralized vegetable noodles. Nutritional yeast adds a cheesy flavor, without pro-inflammatory milk or cream.

Serves 4

Ingredients

  • 2 c. Cauliflower florets

  • 1/4 c. Vegetable or chicken bone broth, or dairy milk

  • 1/2 c. Milk of choice

  • Himalayan salt and pepper to taste

  • 1/4 c. Nutritional yeast

  • 1-2 cloves garlic(optional)-sautéed in grass-fed butter or ghee first

  • 1/4 t. Cayenne pepper(optional)


Directions

  • Steam the cauliflower until soft-about 7-10 min.

  • Drain.

  • Place all ingredients in high powered blender and purée until smooth and creamy.

  • If too thick add more broth-a little at a time.
