Cauliflower Alfredo Sauce
This deliciously healthy, dairy-free alfredo sauce has many uses. Enjoy it as a warming soup, a sauce on your cooked vegetables or as a béchamel sauce over your protein, as well as over a bed of nutritious shirataki noodles, kelp noodles or spiralized vegetable noodles. Nutritional yeast adds a cheesy flavor, without pro-inflammatory milk or cream.
Serves 4
Ingredients
2 c. Cauliflower florets
1/4 c. Vegetable or chicken bone broth, or dairy milk
1/2 c. Milk of choice
Himalayan salt and pepper to taste
1/4 c. Nutritional yeast
1-2 cloves garlic(optional)-sautéed in grass-fed butter or ghee first
1/4 t. Cayenne pepper(optional)
Directions
Steam the cauliflower until soft-about 7-10 min.
Drain.
Place all ingredients in high powered blender and purée until smooth and creamy.
If too thick add more broth-a little at a time.
