Mocha Protein Fudge

Do you crave something sweet and rich to nibble on after dinner? This little nugget of mocha with a hint of cocoa will satisfy your sweet tooth and bring nutritional value at the same time. Loaded with protein powder, healthy fats, and chewy like caramel, a piece of this healthified fudge will be your next go-to satisfying snack. Choosing a protein powder requires knowledge and education about what’s best for your body. While whey and casein protein powders are ideal, not everyone can tolerate a dairy-based powder. I love Drink Wholesome’s egg white protein powders sweetened with monkfruit for those who are looking to optimize their health and watch their sugar intake.

Ingredients:

1 c. Drink Wholesome Egg White Mocha protein powder (or protein powder of choice)**

2/3 c. Lakanto sugar-free maple syrup

1 c. unsweetened almond butter

1/2 c. chopped dark chocolate (I use Lily’s brand)

2 t. pure vanilla extract

1/4 t. sea salt

Directions:

Melt the chocolate over a double boiler.

Mix the almond butter and the maple syrup with a hand mixture.

Add in the melted chocolate, protein powder, vanilla, and sea salt.

Pour in a parchment paper lined small brownie pan or loaf pan.

It will be sticky, so use a plastic spatula to even out the mixture.

Place in fridge for at least 2 hours.

Take out and cut into 2” squares.

Store on wax paper in the fridge for 1-2 weeks.
