Meringue Roulade
Meringe roulade is one of the easiest and delicious desserts to make. This meringue roulade recipe is filled with healthy fats, protein and add fresh berries for some low-glycemic carbs. Pasture-raised, organic egg whites are a clean source of protein, helping your body build and maintain muscle and support cellular health. The whipped cream options provide ample amounts of healthy fats for fuel, brain and gut health and satiety. No need to add sugar to the base because both whipped cream options add natural sweetness, along with the berries. Living without sugar is essential for a long life of health and wellness.
Serves 2-3
Ingredients
2 egg whites
1/2 t. cream of tartar
1/4 t. vanilla extract (alcohol free)
1 c. whipped cream or whipped coconut cream
1/2 c. fresh organic berries (optional)
1/4 c. chopped walnuts (optional)
cooking spray (duck fat, avocado oil, coconut oil)
Directions
Set oven to 400 degrees.
In a stand-up mixer, or using a hand-held mixer, whip all ingredients together until soft peaks form.
Line a baking sheet with silpat or parchment paper (spray with baking oil if using paper).
Pour the batter onto the lined baking sheet and spread into a rectangle about 1/2” thick.
Bake for 8 minutes.
Turn down the oven to 320 degrees and continue to bake for 8 more minutes (watch your oven as times may vary).
When the egg white base is a light golden brown, remove from oven and let cool completely.
Place half of the prepared whipped cream or whipped coconut cream on the base, sprinkle half of the berries and chopped walnuts on top (optional) and gently roll, long side, into a log.
Use the remaining whipped cream option to spread evenly on top and sprinkle the remaining berries and walnuts on top.
Serve immediately or store in fridge until ready.
