Duck Fat Chocolate Chip Cookies
Indulge with healthy, pasture-raised duck fat chocolate chip cookies. We all want a sweet treat at times and this nutritious cookie will fill your cookie jar over and over again. Healthy fats are gut healing, stabilize our blood sugar level, satiate us and curb our cravings for junk foods. Almond flour makes these grain-free and gluten-free, so a healthy option for those with Celiac Disease.
Makes 22 cookies
Ingredients
2 c. Almond Flour
1/2 c. Flaxseed Meal
1 organic egg
1/2 t. Baking soda
1/2 t. Sea salt
1 t. Pure vanilla extract
1/4 c. Duck fat (pasture-raised)
1/4 c. Ghee or butter
1/2 c. brown sugar substitute (Swerve brand)
1/2 c. granular sugar substitute (Swerve brand)
1/2 c. stevia sweetened chocolate chips or dark chocolate baking chips
1/4 c. Chopped walnuts(optional)
Directions
Preheat oven to 350.
Line two large cookie sheets with parchment paper.
Mix all dry ingredients in a bowl together, except add-ins.
In a stand up mixer or using a handheld mixer, beat duck fat, butter and sugars.
Add in vanilla and egg.
Add in flour mixture.
Hand mix in add-ins.
Drop by spoonful onto cookie sheet leaving enough room between for cookies to spread.
Bake for 14 minutes, until the edges are slightly browned.
Transfer to a wire rack to cool.
