Cinnamon-Maple Salted Granola

A healthy, sugar-free granola you can feel good about that is grain-free, gluten-free and dairy-free. This nut-based granola provides you with plant-based protein, healthy fats and is low-carb, making it a healthy granola option for those with Celiac Disease, gluten intolerance and wheat allergies. A handful will go a long way, providing you additional fiber, vitamins and minerals that will keep you full and satiated. Try over yogurt or as a on-the-go healthy snack.

Makes 20 servings

Ingredients

  • 4 oz raw almonds 

  • 4 oz raw slivered almonds 

  • 4 oz raw walnuts 

  • 4 oz raw pecans 

  • 4 oz raw cashews 

  • 1/2 c. Shredded unsweetened coconut 

  • 1/4 c. Lakanto Maple flavored syrup

  • 1/2 c. Flaxseed meal

  • 1/4 c. Melted coconut oil, unrefined, organic 

  • 1-2 t. Ground cinnamon

  • 1 t. Himalayan sea salt 

Directions

  • Preheat oven to 350.

  • Line a large cookie sheet with unbleached parchment paper.

  • Use two sheet pans of necessary.

  • Mix all ingredients in a large bowl.

  • Pour mixture onto cookie sheet and spread evenly.

  • Bake for 12-15 minutes.

  • Do not walk away!

  • You will notice steam rising.

  • Stir the mixture every 3-4 minutes and watch that it doesn’t burn- all ovens are different.

  • When the mixture looks lightly browned, it’s done.

  • Cool completely and store in a glass container.
