Cinnamon-Maple Salted Granola
A healthy, sugar-free granola you can feel good about that is grain-free, gluten-free and dairy-free. This nut-based granola provides you with plant-based protein, healthy fats and is low-carb, making it a healthy granola option for those with Celiac Disease, gluten intolerance and wheat allergies. A handful will go a long way, providing you additional fiber, vitamins and minerals that will keep you full and satiated. Try over yogurt or as a on-the-go healthy snack.
Makes 20 servings
Ingredients
4 oz raw almonds
4 oz raw slivered almonds
4 oz raw walnuts
4 oz raw pecans
4 oz raw cashews
1/2 c. Shredded unsweetened coconut
1/4 c. Lakanto Maple flavored syrup
1/2 c. Flaxseed meal
1/4 c. Melted coconut oil, unrefined, organic
1-2 t. Ground cinnamon
1 t. Himalayan sea salt
Directions
Preheat oven to 350.
Line a large cookie sheet with unbleached parchment paper.
Use two sheet pans of necessary.
Mix all ingredients in a large bowl.
Pour mixture onto cookie sheet and spread evenly.
Bake for 12-15 minutes.
Do not walk away!
You will notice steam rising.
Stir the mixture every 3-4 minutes and watch that it doesn’t burn- all ovens are different.
When the mixture looks lightly browned, it’s done.
Cool completely and store in a glass container.
