Grain-Free Snickerdoodles

Healthy snickerdoodle cookies that will be a household favorite. These easy-to-make cookies are grain-free, dairy-free and sugar-free- go ahead and have two! almond flour may reduce the risk of heart disease, improve blood sugar levels and is gluten-free, making it a great option for those with celiac disease or a wheat intolerance. Ghee adds in dairy-free healthy fats.

Makes 20 cookies

Ingredients

  • 2 1/2 c. Almond flour

  • 1/2 c. Ghee

  • 3/4 c. Granular monk fruit, stevia, erythritol

  • 1/2 t. Sea salt

  • 1/2 t. Baking powder

  • 2 eggs

  • 1 t. Pure vanilla extract

    For rolling cookies in:

  • 3 T. Granular monk fruit, stevia, erythritol

  • 2 t. Ground cinnamon

Directions

  • Preheat oven to 350.

  • In a stand-up mixer, food processor or using a hand-held mixer, blend all ingredients until a semi-stiff dough forms.

  • Line a cookie sheet with Silpat or unbleached parchment paper.

  • Mix the cinnamon and monkfruit together in a small bowl.

  • Roll dough into 2” balls, then roll in cinnamon mixture and place on cookie sheet.

  • Using the heel of your palm, lightly press down on the cookies.

  • Bake for 15 minutes and let cool completely.
