Grain-Free Snickerdoodles
Healthy snickerdoodle cookies that will be a household favorite. These easy-to-make cookies are grain-free, dairy-free and sugar-free- go ahead and have two! almond flour may reduce the risk of heart disease, improve blood sugar levels and is gluten-free, making it a great option for those with celiac disease or a wheat intolerance. Ghee adds in dairy-free healthy fats.
Makes 20 cookies
Ingredients
2 1/2 c. Almond flour
1/2 c. Ghee
3/4 c. Granular monk fruit, stevia, erythritol
1/2 t. Sea salt
1/2 t. Baking powder
2 eggs
1 t. Pure vanilla extract
For rolling cookies in:
3 T. Granular monk fruit, stevia, erythritol
2 t. Ground cinnamon
Directions
Preheat oven to 350.
In a stand-up mixer, food processor or using a hand-held mixer, blend all ingredients until a semi-stiff dough forms.
Line a cookie sheet with Silpat or unbleached parchment paper.
Mix the cinnamon and monkfruit together in a small bowl.
Roll dough into 2” balls, then roll in cinnamon mixture and place on cookie sheet.
Using the heel of your palm, lightly press down on the cookies.
Bake for 15 minutes and let cool completely.
