Scandinavian Seeded Bread

A healthy, nutritious and satisfying slice of this Scandinavian Seeded Bread, lightly toasted with chia jam will put a smile on your face. This easy to bake bread is full of tasty seeds and nuts, full of healthy fats, vitamins, minerals, fiber and protein. This gluten-free and grain-free bread is a healthy breakfast option for those who have Celiac Disease, gluten intolerance or wheat allergies. Try with a fried egg, turkey slices with fresh avocado or with some grass-fed butter or ghee.

Makes 16 slices

Ingredients

  • 2 c. raw sunflower seeds

  • 2 c. raw pumpkin seeds

  • 1 c. chia seeds

  • 1 c. hemp seeds

  • ⅓ c. olive oil

  • 5 organic eggs

  • Pinch of sea salt

    Directions:

  • Preheat oven to 350.

  • Mix all ingredients in a large bowl.

  • Line a bread pan with parchment paper.

  • Pour the mixture into the lined pan and even out with a spatula.

  • Bake for 40 min.

  • This bread will not rise.

  • You will see oil at top- do not wipe off.

  • Let it soak back into the bread.

  • Let cool for 15 minutes before removing it from pan.

  • To remove, lift the loaf by the parchment paper and let cool for 10 additional minutes before slicing.

  • Slice warm and serve.

  • If you’d like to freeze some, place a piece of parchment paper in between each slice, then into a bag.

  • This will make it easier to separate.

  • To reheat, toast on low heat for a few minutes.

  • Note- you can mix any nuts and seeds as long as you have the same volume.
