Chocolate Coconut Mousse

Missing something sweet, cold and creamy in your life? This healthy and nutritious chocolaty dessert will solve that problem and keep you on your low-carb, sugar-free health journey. Full-fat coconut milk gives this recipe healthy fats to keep our brain fueled, regulate our blood sugar and satiate us with total decadence. Cacao nibs just add more polyphenols to your daily dose of antioxidants.

Serves 4

Ingredients

  • 1 can full-fat coconut milk/cream (place canned coconut in refrigerator overnight)

  • 3 T. cocoa/cacao powder

  • 1 t. Almond extract or organic almond powder (Biofinest brand) (optional)

  • 5 drops sugar-free chocolate liquid (stevia or monk fruit based) (Sweet Leaf or Now Foods brands)

  • 2 T. cacao nibs (optional)

Directions

  • Take the can of coconut milk/cream out of the refrigerator and scoop out the thick white part (if using coconut milk).

  • Place in a mixing bowl.

  • Add the rest of the ingredients, except for the cacao nibs.

  • Using a hand-held mixer, or stand-up mixer with whip attachment, beat on high until light and fluffy.

  • Eat immediately or store in the refrigerator.

  • Sprinkle cacao nibs on top before serving.
