Spicy Sweet Potato Soup

A warming soup filled with healthy antioxidants and brain fueling fats that will keep you satiated and nourished for hours. The added fresh ginger is optimal for immunity and lends a delicious Thai infused flavor along side the full-fat coconut milk. The coconut oil provides your brain with healthy medium chain triglycerides and fills your kitchen up with a calming aroma. Add shrimp or salmon.

Serves 4

Ingredients

  • 2 Sweet Potatoes, peeled and diced

  • 1 T. fresh ginger, minced

  • 2 T.  coconut oil (avocado oil, olive oil)

  • 1 carrot, diced

  • 1 leek, chopped

  • 1 t. paprika

  • 1/2 t. turmeric

  • Pinch of cayenne pepper (optional)

  • 1 can full fat coconut milk

  • 3 c. vegetable or chicken stock

  • Salt and Pepper to taste

Directions

  • Heat the oil in a large soup pot over medium heat.

  • Add the leek and ginger and saute for 3 minutes.

  • Add the rest of the vegetables and spices and cook for another 5 minutes.

  • Add the coconut milk and stock, stir to combine everything, then place a lid on the pot and simmer on a low heat for 45 minutes.

  • Blend the soup either in a blender(in batches) or with a handheld immersion stick. Season with salt and pepper to taste.
