Raspberry-Chia Jam

Berries are naturally sweet, low on the glycemic index and full of antioxidants, phytonutrients, vitamins and minerals. This healthy chia jam is a tasty option for people who are looking to reduce their sugar intake. Sugar accelerates aging and is the root cause of all chronic illnesses. The only sweetness here is from the healthy berries. Add to plain yogurt, a smoothie or your morning toast.

Makes 1 1/2 cups

Ingredients

  • 3-4 c. Fresh organic raspberries

  • Juice of 1 lemon

  • 1/4 c. Chia seeds

  • 2-3 T. granular stevia, monk fruit, erythritol

Directions

  • Place a small saucepan over medium heat and bring the raspberries, sweetener and lemon juice to a simmer, stirring constantly until the berries are broken down.

  • Add the chia seeds and let the jam thicken. 

  • Cool off and store in a glass jar and enjoy.
