Umami Mushroom Burgers
Umami is one of the five basic tastes, characterized by savory or broth-like. My Umami Mushroom Burger recipe is easy to put together and filled with nutrients. I prefer grass-fed beef or bison because of the health benefits such as higher amounts of omega-3 fatty acids, amino acid profiles and zero carbohydrates. Eating clean protein, such as grass-fed beef, greatly minimize the toxic overload most people take in through food. Omega-3 fatty acids are a healthy fat that supports brain and heart health. Amino acids are the building blocks of protein and our muscles, or longevity organ, require them to grow and recover. Zero carbohydrates greatly reduces our sugar, or glucose, intake, helping us stabilize our insulin output and blood sugar levels. These Umami Mushroom Burgers are a great weekly staple
Serves 4
Ingredients
1 1/2 c. finely diced shiitake mushrooms
1 T. avocado oil (or butter)
1/4 t. sea salt
1 lb grass-fed ground beef or bison
1/4 c. green onion
1 garlic clove minced (optional)
1 1/2 t. coconut aminos
1 T. fish sauce
Directions
Heat a skillet over medium-high and add the oil.
When heated, add the diced mushrooms.
Saute until the mushrooms are soft and release their liquid, about 5 minutes.
Add the mushrooms to a large bowl to cool slightly, then and add the remaining ingredients.
Mix and then shape the beef mixture into 4 patties.
Heat the skillet back to medium-high or a grill.
Add patties, cooking on 1 side for 4-5 minutes, flip and finish 3-4 minutes on the second side.
Depending on how you like the the burgers cooked adjust the cooking time.
