Mashed Cauliflower
My kids love this Mashed Cauliflower Recipe that's filled with healthy fats for a decadent side dish. Picky kids can't resist mashed cauliflower, and what a great way to get some veggies on the plate that are not starch filled, like potatoes. Mashed cauliflower is a low-carb alternative to mashed potatoes, rice and pasta. It's heavenly under steak and under scrambled eggs for a breakfast bowl. A great go-to for any weight loss journey.
Serves 6-8
Ingredients
2 (16 oz.) packages of frozen riced cauliflower
3 T. unsalted ghee or butter
2 c. water
1 t. sea salt
Directions
Heat 2 T. of the butter in a large sauce pan over medium-high heat.
Add the cauliflower and sea salt and cook for 5 minutes.
Add the water, bring to a boil and then simmer, covered, for 10 minutes.
Drain the cauliflower, saving 1/4 c. of the water it cooked in.
Place the cooked cauliflower, the remaining 1 T. of ghee or butter and the cooking liquid into a food processor and puree on high.
Salt to taste.
