Cauliflower Hummus

Healthy, legume-free hummus that everyone will love. Warming spices, add depth of flavor, while the polyphenol-rich olive oil and sesame tahini provides excellent sources of healthy fats to fuel your brain and keep you fuller for longer. Cauliflower contains sulfur-containing compounds called glucosinolates that have cancer fighting powers that may reduce inflammation and stabilize blood sugar.

Makes 1 1/2 cups

Ingredients

  • 1 large head of organic cauliflower

  • 1/4 c. Organic, Unfiltered olive oil

  • 1/4 c. Organic tahini

  • 2 lemons

  • 1/2 t. Ground cumin

  • 1/2 t. Ground turmeric

  • 1/4 t. Ground coriander

  • 1:4 t. Ground black pepper

  • Sea salt to taste

  • 1/4 c. Water

  • 1-2 garlic cloves (optional)

Directions

  • Preheat oven to 350.

  • Line a baking sheet with parchment paper.

  • Place cauliflower florets and both lemons cut in half on the pan.

  • Drizzle with olive oil, sea salt and paper.

  • Bake for 45 min. or until soft.

  • Remove from oven and place all ingredients except lemons in a food processor or high powered blender.

  • Purée until smooth.

  • Add juice from the roasted lemons.

  • Adjust consistency and taste with more water and spices.

  • Serve with sunflower and pumpkin seeds on top.

  • For a salad dressing version, place 2-3 T. In a bowl and add hot water, a T. at a time.

  • Whisk until you reach desired consistency.
