Cauliflower Hummus
Healthy, legume-free hummus that everyone will love. Warming spices, add depth of flavor, while the polyphenol-rich olive oil and sesame tahini provides excellent sources of healthy fats to fuel your brain and keep you fuller for longer. Cauliflower contains sulfur-containing compounds called glucosinolates that have cancer fighting powers that may reduce inflammation and stabilize blood sugar.
Makes 1 1/2 cups
Ingredients
1 large head of organic cauliflower
1/4 c. Organic, Unfiltered olive oil
1/4 c. Organic tahini
2 lemons
1/2 t. Ground cumin
1/2 t. Ground turmeric
1/4 t. Ground coriander
1:4 t. Ground black pepper
Sea salt to taste
1/4 c. Water
1-2 garlic cloves (optional)
Directions
Preheat oven to 350.
Line a baking sheet with parchment paper.
Place cauliflower florets and both lemons cut in half on the pan.
Drizzle with olive oil, sea salt and paper.
Bake for 45 min. or until soft.
Remove from oven and place all ingredients except lemons in a food processor or high powered blender.
Purée until smooth.
Add juice from the roasted lemons.
Adjust consistency and taste with more water and spices.
Serve with sunflower and pumpkin seeds on top.
For a salad dressing version, place 2-3 T. In a bowl and add hot water, a T. at a time.
Whisk until you reach desired consistency.
