Cashew Nut Butter Cookies
A healthy Cashew Nut Butter cookie recipe that's grain-free, gluten-free and dairy-free. A nutritious snack for those with Celiac Disease or wheat and peanut allergies. Cashews are a great source of fat, vitamins, minerals, and fiber. Healthy fats help keep you feeling fuller for longer, so 1 cookie will go a long way.
Makes 10-12 cookies
Ingredients
1 c. Unsweetened cashew butter (can sub almond, sunflower seed, walnut, tahini or pumpkin butters as well)
⅓ c. Almond flour
¼ t. Baking soda
¼ c. Lakanto maple flavored syrup (sugar-free)
½ t. Pure vanilla extract
1 egg
¼ t. Salt
Maldon salt
1/4 c. sugar-free chocolate chips (optional)
Directions
Preheat oven to 350.
Mix all ingredients.
Roll a heaping spoonful of batter into the palm of your hand into a ball.
Press down both ways with a fork (if the dough is sticking you can use avocado oil spray on a fork).
Bake 10-12 minutes on a lined cookie sheet with parchment paper.
Sprinkle Maldon salt on top of each cookie, gently pressing down.
Let cool completely.
