Bolognese Sauce
My Bolognese Sauce recipe is nutritious, delicious and has multiple uses. Starting with clean proteins, such as pastured-raised, antibiotic free pork, is important so that you eliminate toxins such as additives, hormones, antibiotics and herbicides that are used in the feed. The fat on animals is where the toxins are stored so buying clean proteins is one way to ensure the integrity of the product. The fat on clean animal proteins is also where healthy omega-3 fatty acids are. Our body, gut and brain, need healthy fats for optimal human health. Supporting farmers that raise their animals responsibly also aids in regenerative farming practices - good for the environment, good for you. This Bolognese recipe is delicious over your noodles of choice, but it can also be enjoyed over scrambled eggs, roasted veggies and in a bowl topped with chopped fresh herbs and ricotta cheese.
Makes 6-8 servings
Ingredients
1 lb. pork sausage, 50/50 mild and spicy, out of casings
1 lb. ground pork
1 - 32 oz. can pureed tomatoes
1 - 32 oz. diced tomatoes
1 sm. tomato paste
2 T. Swerve brown sugar
1 bay leaf
1 t. ground oregano
1 t. ground parsley
salt & pepper to taste
1 Spanish onion, chopped
1 green pepper, chopped (leave out if you do not eat nightshades)
3 cloves garlic, peeled and chopped
1 T. olive oil
1 T. ghee/butter
Directions
In a large pot, heat oil and butter.
Cook pork meats until browned.
Add onions, peppers and cook for 5 minutes.
Add the remaining ingredients and simmer on low for 3 hours.
Adjust your seasonings as needed.
Serve over gluten-free pasta, grain-free pasta, kelp noodles, shirataki noodles or enjoy on it’s own in a bowl.
