Baked Greek Bone-In Chicken

Who doesn’t love the flavors of Greek chicken? Lemon, olive oil, rosemary…it’s so delicious. I’m a fan of bone-in chicken because it comes out moist and flavorful. This Baked Greek Chicken recipe is so easy to make and foolproof. Ingredients

  • 4 bone-in chicken breasts

  • 2 lemons

  • 1 c. chicken bone broth

  • 1/2 c. pitted kalamata olives

  • 1/4 c. olive oil

  • 1-1/2 T. dried rosemary

  • 1/2 lb. feta cheese

  • sea salt and pepper to taste

  • 4-6 cloves garlic (optional)

Directions

  • Preheat oven to 350 degrees F.

  • Pat dry chicken breasts and season with sea salt and pepper.

  • Add the chicken to a roasting pan.

  • In a small bowl, combine the olive oil, lemon juice, minced garlic (optional), and rosemary (save the lemon rinds after squeezing the juice out).

  • Pour the olive oil mixture over the chicken.

  • Cut the lemon into wedges and place in the roasting pan.

  • Add in the kalamata olives.

  • Pour the chicken broth into the pan, but not directly over the chicken pieces.

  • Bake uncovered for 45-60 minutes.

  • Crumble the feta and add on top.

  • Turn heat up to 425 degrees F and roast for another 15-20 minutes, until browned and crispy.

  • Remove from oven and serve.

  • Place the juices in small separate bowls for the chicken to be dipped in.
